This video gives you a sense of how chia seeds behave when added to a beverage. The seed coat expands to form a gel, and the seeds float throughout the drink, making a refreshing beverage similar to bubble tea.

Try experimenting with this method:
Make chia gel (1 part chia to 8 parts water, stir several times over 10 minutes, then let it set for 1 hour).
Then add 1 part gel to your juice, in whatever quantity you prefer. The sugar in the juice makes it more dense than the gel, so the seeds will float, at least until they absorb the sugar.
(I usually drink chia beverages from a bottle that I can shake between sips.)

Is there a secret to getting them to float? I tried adding them to water and they just all sunk to the bottom. Wanted to make a drink like I bought at Whole Foods (Mamma Chia brand) because I don't want to continue paying those prices!
