Alisa Fleming at Just Baking has posted her recipe for VEGAN chia-banana muffins. Delicious and fool proof. She is using the chia gel as a substitute for eggs in this recipe. Maybe I'll egg-speriment with it over the weekend.

Hi there, I'm glad you liked the muffin idea! They do work unbelievably well as an egg replacer. I was actually trialing out the chia seeds for my main website, www.godairyfree.org, and I sent a batch over to Hannah of Bittersweet (bittersweetblog.wordpress.com).
