Alisa Fleming at Just Baking has posted her recipe for VEGAN chia-banana muffins. Delicious and fool proof. She is using the chia gel as a substitute for eggs in this recipe. Maybe I'll egg-speriment with it over the weekend.;

Hi there, I'm glad you liked the muffin idea! They do work unbelievably well as an egg replacer. I was actually trialing out the chia seeds for my main website, www.godairyfree.org, and I sent a batch over to Hannah of Bittersweet (bittersweetblog.wordpress.com). We are publishing her vegan dessert cookbook, and well, you can see why... check out this recipe she created using the chia seeds as an egg replacer - http://www.godairyfree.org/Recipes/Dairy-Free-Desserts/Strawberry-Clafoutis-Vegan-Nut-Free.html. It sort of put my humble little muffins to shame! We are both happy to help with your future eggs-periments : )
